When the first cool nights reach the valley, we pull a few frames of our raw wildflower honey and whip the honey with organic pumpkin pie spice. The honey stays raw and alive, never heated, while the spices bloom into cinnamon, nutmeg, ginger, and clove. What fills the jar is thick and cloud-soft, the color of autumn leaves, with a warm spice that lingers after the sweetness fades. It's a small batch, made once a season. When the jars are spoken for, the batch is done until next autumn.
