California Toyon
Toyon Honey
A distinctly Californian honey.
Size
Toyon Honey is one of our rare seasonal California harvests. The honey comes from the nectar of the California Toyon plant — a native shrub of the lower Sierra Nevada foothills, found around Oakdale, Jamestown, Chinese Camp, and Sonora. Its character comes naturally from the nectar the bees collected during the Toyon bloom. This is not an artificial honey flavor. The result is a deep, smoky, complex honey unlike anything found on a grocery shelf.

The Harvest Story
From the Lower Sierra Nevada to Glass
Toyon only blooms for a short window in the lower Sierra Nevada. Here's how this rare honey got from the mountain to glass in 2026.
- 01
The Lower Sierra
We move the hives down to the lower Sierra Nevada and set them among the toyon and chaparral that grow thick on those slopes. It's a wild, remote place to keep bees.
- 02
The Toyon Bloom
The bees work the toyon blossom among other wild mountain-range plants. The toyon flow is brief — a short window each season — so timing is everything.
- 03
The Pull · 2026
Eve and Cy harvest by hand during the toyon flow of 2026.
- 04
Bottled Raw
Settled and bottled raw in glass — a smoky, rare honey from a fleeting Sierra harvest. Once it's gone, it's gone until the next bloom.

A true local treasure
I picked this up at the Oakdale farmers market and it is unlike anything else. The smoky depth is incredible on a cheese board. My guests always ask what that special flavor is!

Best honey in the foothills
Cy and Eve are so knowledgeable about their bees. This Toyon honey is definitely my new favorite for tea. The smoky notes come through beautifully in a warm cup.

Unique flavor profile
The smokiness took a moment to get used to, but now we crave it. I especially love that no two jars look exactly the same since it is a wild harvest. Worth the little learning curve.
