California Toyon Honey
A distinctly Californian honey.
Harvested from California's native Toyon country — one of our rare seasonal harvests.
Toyon Honey comes from the nectar of the California Toyon — a native shrub of the lower Sierra Nevada foothills. Its character comes naturally from the bloom. This is not an artificial honey flavor. It is deep, smoky, and complex, and it is difficult to find compared with standard honey varieties.

What Is Toyon?
California's native Toyon plant.
Toyon (Heteromeles arbutifolia) is a California native shrub, sometimes called Christmas berry for its clusters of bright red berries. It grows in the chaparral and foothills of the Sierra Nevada, and produces a seasonal nectar flow that bees turn into something unmistakable.
We harvest our Toyon honey in the lower Sierra Nevada foothills — around Oakdale, Jamestown, Chinese Camp, and Sonora. A distinctly Californian honey.
How Bees Create It
From foothill bloom to jar.
During the Toyon bloom, our bees forage across the surrounding foothills, collecting nectar from the flowering shrubs. Back at the hive, they transform that nectar into honey. We harvest only the surplus, keep it completely raw and unfiltered, and bottle it in glass. The deep, smoky, complex character is what the bees made — nothing is added.
